TARTA CAROLANS
Hola a todos! Esta es la primera entrada para Pecadores que preparo... Es una tarta que he hecho para la familia y por eso la publico aquí. El resto de mis recetas las podéis ver en mi Otro Blog Más Sano pero no por ello menos apetecible, aun que está feo que lo diga yo. Os animo a haceros seguidores para no perderos mis otras publicaciones más habituales.
Esta Tarta me ha encantado, pero no solo a mí. Le ha gustado incluso a la peque de la casa, cosa que me ha sorprendido bastante. Su base es de Mantequilla y Galletas, realmente tierna y nada empalagosa. La Musse es de Carolans muy suave y deliciosa. Yo no soy una persona que suela beber mucho pero en la sobremesa, en comidas y cenas con amigos un chupito de crema si me lo tomo y me gusta. Ya sea este o otro como nuestra Crema de Orujo gallega por ejemplo.
La Gelatina yo la hice con Café en Grano recién molido, el que tomamos en casa nosotros. Todos los granos que veis son decoración que la peque reutilizó después para cocinar en su cocinita de juguete. Al final todos en casa nos implicamos en las recetas, no os parece? Bueno vamos con la receta, que seguro lo estáis deseando.
INGREDIENTES:
Para la Base de Galleta
◈ 12 Galletas tipo Digestivas◈ 75gr de Mantequilla Derretida
Para la Musse de Carolans
◈ 250ml de Nata para Montar
◈ 250gr de Queso Mascarpone
◈ 100ml de Orujo
◈ 100gr de Azúcar
◈ 1 Yogur Natural
◈ 5 Hojas de Gelatina
◈ 30ml de Leche caliente para disolver la gelatina
Para la Gelatina de Café
◈ 125ml de Café Recién Molido Burdet
◈ 1 Cucharada de Azúcar
◈ 2 Hojas de Gelatina
PREPARACIÓN:
◈ Empezamos por triturar las galletas tipo digestive. Es necesario que quede un polvo fino.
◈ Agregamos la mantequilla derretida, yo lo hice en unos segundos de microondas.
◈ Mezclamos todo muy bien hasta conseguir una masa húmeda que quede homogénea.
◈ En un molde redondo desmontable colocamos un papel de horneado. Entre el aro y el disco para la base de nuestra tarta.
◈ Añadimos la masa de nuestras galletas y una vez bien repartido presionamos. Tiene que quedar una base bien compactada para que sea resistente.
◈ Dejamos en el frigorífico una hora para que quede más durita.
◈ Después hidratamos la gelatina en agua fría 4 minutos.
◈ Para disolverlas las mezclamos en un vaso con un par de dedos de leche caliente.
◈ En un bol muy frío (yo lo tuve en el congelador un poco) mezclamos el queso Mascarpone con el yogur, el azúcar, la gelatina y el Carolans.
◈ Tiene que quedar una crema homogénea y sin grumos.
◈ Añadimos la nata, removemos un par de veces y montamos todo junto. Yo con el robot.
◈ Una vez montado pasamos al molde, encima de la base de galletas.
◈ Dejamos 4 horas para que cuaje bien.
◈ El siguiente paso es hacer la gelatina de café.
◈ Hidratamos la gelatina.
◈ En un cazo ponemos el café con el azúcar. Disolvemos e incorporamos la gelatina.
◈ Removemos bien para que quede completamdeente disuelta y dejamos enfriar un poco.
◈ Ponemos sobre nuestra Musse de Carolans y volvemos a introducir en la nevera para que enfríe la gelatina durante una hora y listo.
◈ Yo la musse la dejé menos de cuatro horas porque iba con un poco de prisa. Eso hizo que no me quedase tan brillante la gelatina como otras veces.
